Ingredients for Italian Rice: 2 Cups Rice ½ Broccoli 6 Baby Carrots 1 Red Bell pepper 4 Tablespoon Vinegar ½ Onion 15-20 Green Olives 4-5 Mushrooms ¼ Bunch Lettuce Leaves ¼ Bunch Spinach/Kale Ingredients for Veg Soup: 3 Tomatoes 1/2 Onion ½ Broccoli ½ Cup Corn ½ Cup Green Peas ½ Cup Sprouts ¼ Bunch Corianders Instructions for Italian Rice: - Boil the rice with double the water - Cut all vegetables into very small chunks - Take a big bowl and add vinegar and olives (cut into small pieces) - Add all the vegetable chunks into the bowl and mix well - Add salt to taste and mix again - Once the rice is ready, mix rice and vegetables together. - Add Italian seasoning as per taste (Oregano, Basil Leaves). Instructions for Veg Soup: - Cut all vegetables into small chunks - Take a pan and heat it - Put onion and roast them till they turn brown - Put tomatoes, coriander, corn, and peas. Mix it well to make it a paste like, keep on the heat for 5 min - Add 4 cups of water and salt to taste - Bring the water to boil and let it boil for 5 min - Add all broccoli florets and sprouts and turn off the flame to keep the vegetables crunchy.
