- 1 14oz can Kidney Beans drained
- 1 cup Pinto Beans
- 1 cup Vegetable Stock
- 2 links Veggie Sausage
- 2 cloves Garlic
- 1 Onion chopped
- 3 cups Brown Rice cooked
- Salt and Pepper to taste

Instructions
- Sauté onions with veggie sausage in canola oil until onions are translucent. Add garlic and cook for 1 minute.
- Add 1/2 cup vegetable broth and mix in 2 tablespoons of tomato paste until fully mixed. Then add pinto beans and the remaining broth and mix well.
- Add cooked rice and pinto beans and mix well. Cook on medium heat, stirring consistently for 2-3 minutes until fully heated.
- Add additional broth or water if needed. Optional garnish with avocado.
