  1. Sauté onions with veggie sausage in canola oil until onions are translucent. Add garlic and cook for 1 minute.
  2. Add 1/2 cup vegetable broth and mix in 2 tablespoons of tomato paste until fully mixed. Then add pinto beans and the remaining broth and mix well.
  3. Add cooked rice and pinto beans and mix well. Cook on medium heat, stirring consistently for 2-3 minutes until fully heated.
  4. Add additional broth or water if needed. Optional garnish with avocado.
