Whole Grain Waffles with Fresh Strawberries and Blueberries

About this Recipe:

While my family loves waffles, we also strive to eat healthier whenever possible. We love to make and eat these as a family on the weekends!

 

Ingredients (Serves 10-12 people)
1 cup white whole wheat flour
½ cup quick oats
¼ cup wheat germ
¼ cup flax seed meal
2 cups milk
2 eggs
2 tbspn. baking powder
1/3 cup sugar
½ tspn. vanilla extract
1 lb. of fresh strawberries
1 lb. of fresh blueberries

Directions
1. Turn on waffle iron to preheat
2. Combine all dry ingredients in a large bowl and stir
3. Slowly add milk while stirring mixture
4. Stir until evenly mixed
5. Add vanilla extract and stir
6. Beat eggs in a small mixing bowl
7. Fold eggs into mixture
8. Stir until evenly mixed
9. Pour appropriate amount into the entire bottom half of the waffle iron. Avoid the batter spilling over the sides.
10. Cook until golden brown
11. While waffles are cooking, slice fresh strawberries in halves or quarters, your preference, and rinse under cool water. Drain. Cut off tops if you desire.
12. Then, rinse fresh blueberries under cool water. Drain.
13. Place ¼ of a waffle on a plate and top with fresh strawberries and blueberries. Portions may vary depending upon berry preference.
14. Enjoy!
