- pulav
- 2 teaspoon Olive Oil
- 1/4 teaspoon Cumin Seeds
- 1/4 teaspoon Fennel Seeds
- 1 piece Green Chills whole,don't slit or cut
- 1 small Onion cut into small pieces
- 1/4 cup Peas
- 1/4 cup Carrots cut into small pieces
- 1/4 cup Corn try to find organic or non-GMO
- 1 cup Rice Basmati suggested. soak for 15 minutes(optional)
- 1 cup Water
- 1 cup Coconut Milk fresh coconut milk is preferred
- 1/2 teaspoon Salt adjust to taste
- 1/2 teaspoon Pepper Powder freshly ground is preferred
- for raitha/pulav
- 1/4 cup Coriander use in both pulav and raitha
- 1/4 cup Mint use in both pulav and raitha
- for raitha
- 1/4 cup Curd freshly prepared or plain yogurt
- 1/4 cup Onion cut into pieces(optional)
- 1 pinch Salt to sprinlkle on raitha
- 1 pinch Chat raitha
- 1 pinch Chili Powder raitha
- pulav
- 1/2 teaspoon Ginger freshly prepared preferred
- 1/2 teaspoon Garlic paste

Instructions
- Vegetable pulav: Heat a pan/pressure cooker on a cooktop.
- Add 1 teaspoon olive oil and once it becomes hot
- Add the cumin/fennel seeds and let it crack.
- Then add green chilly along with mint and coriander leaves.
- After 2 minutes add onion and let it become translucent.
- Then add the ginger/garlic paste and saute for 2-3 minutes.
- Add all the vegetables and saute for few minutes.
- Now add the water+coconut milk and let it get hot to a boiling stage.
- Now add the soaked rice removing the excess water. give a stir.
- Close the lid after adding salt/pepper powder and the remaining 1 teaspoon oil.
- 10.Cook in a slow flame for approximately 15-20 minutes.
- After 20 minutes open the lid and give a complete stir gently. Hot and tasty pulav is ready to serve.
- Raitha: In a bowl add the onions and salt to taste.
- Mix it well then add the curd/yogurt.
- Sprinkle a pinch of chat/chilly powder on top.
- Add coriander and mint leaves (Optional)
