- 4 cups Kale
- 1/3 cup Pine Nuts
- 1/4 tsp Garlic Powder
- 1/2 tsp Salt
- 1 whole Lemon Juice Fresh squeezed
- 1 small Avocado
- 1/2 cup Olive Oil
- 1/2 cup Parmesan Cheese
- 2 large Sweet potatoes
- 1 tbsp Olive Oil

Instructions
- 1. Toast pine nuts in pan over medium heat (about 5-7 minutes) and allow to cool.
- 2. Using spiralizer, spiralize sweet potatoes.
- 3. Toss sweet potatoes with 1-2 tablespoon olive oil, salt to taste, spread out on a cookie sheet
- 4. Roast for 8-10 min at 425 degrees. Noodles should be tender, not soggy.
- 5. In food processor, combine toasted pine nuts, kale, garlic, salt, lemon juice, and avocado. While blending, slowly pour in olive oil. Stir in Parmesan cheese.
- 6. Toss sweet potato noodles with avo-kale pesto.
