Sweet Potato Noodles with Avo-Kale Pesto
I wanted to make a simple healthier alternative to pasta noodles and give a superfood boost to traditional pesto. After brainstorming and testing my recipe out a few times, I adjusted it to make it taste really good.

  1. 1. Toast pine nuts in pan over medium heat (about 5-7 minutes) and allow to cool.
  2. 2. Using spiralizer, spiralize sweet potatoes.
  3. 3. Toss sweet potatoes with 1-2 tablespoon olive oil, salt to taste, spread out on a cookie sheet
  4. 4. Roast for 8-10 min at 425 degrees. Noodles should be tender, not soggy.
  5. 5. In food processor, combine toasted pine nuts, kale, garlic, salt, lemon juice, and avocado. While blending, slowly pour in olive oil. Stir in Parmesan cheese.
  6. 6. Toss sweet potato noodles with avo-kale pesto.
