My great start breakfast is made up of mini frittatas served with a fruit and muffin kabob. The frittatas are my healthy spin on quiches, without the unhealthy pastry crust. In addition to the eggs, I use a variety of peppers, onions, spinach and herbs! They are full of vitamins and lean protein. Along with the frittatas, I serve a fruit kabob with a special twist - a delicious banana chocolate chip muffin pop made with banana for natural sweetness to reduce the amount of sugar is added!
