Great Start Breakfast
My great start breakfast is made up of mini frittatas served with a fruit and muffin kabob. The frittatas are my healthy spin on quiches, without the unhealthy pastry crust. In addition to the eggs, I use a variety of peppers, onions, spinach and herbs! They are full of vitamins and lean protein. Along with the frittatas, I serve a fruit kabob with a special twist – a delicious banana chocolate chip muffin pop made with banana for natural sweetness to reduce the amount of sugar is added!

  1. Mini Frittatas Directions: 1. Preheat oven 350 degrees 2. Blend 6 eggs with peppers, onion, cheese, salt, pepper, and herbs. 3. For cheddar cheese, consider using parsley. For Monterey jack cheese, consider using oregano. (You can also substitute mozzarella cheese with basil if desired.) 4. Spray muffin tin with nonstick spray and pour egg mixture into cups. 5. Bake at 350 degrees for approximately 12 minutes, or until eggs are cooked.
  2. Muffin Pops Directions: 1. In a small bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. 2. In a large bowl, mash the banana and add 1 egg, brown sugar, vanilla and butter — blend. 3. Add the dry mixture to the wet mixture and gently stir. 4. Then fold in chocolate chips. 5. Spray cake pop baking tray (both sides) with nonstick spray and pour muffin mixture in. 6. Bake at 350 degrees for approximately 7 minutes, or until baked.
  3. Fruit Kabobs Directions: 1. Wash and dry strawberries and remove stem. 2. Cut in half. Thread onto skewer. 3. Then thread finished muffin pop and top with another strawberry (or other fruit such as grapes).
