Preheat oven to 400 degrees.
Cut each zucchini into halves through the length
Place on baking sheet lined with foil or parchment paper.
In a bowl, mix together 2 tablespoons of olive oil and minced garlic then brush lightly over tops of zucchini.
Sprinkle with salt to taste then spread 1-2Tbsp marinara sauce over each zucchini. Sprinkle chopped spinach onto sauce
Top with the vegan mozzarella cheese then with vegan parmesan cheese.
Bake for approximately 15-20 minutes
Remove from oven and sprinkle with chopped fresh oregano.
