Being from the South, macaroni and cheese is one of my absolute favorites, but it really lacks nutrition. I took my favorite macaroni & cheese recipe and gave it a healthy makeover by replacing the noodles with cauliflower, which has a similar texture to pasta. I also added some chopped broccoli so I can get my greens. Whole wheat bread crumbs replace the dried bread crumbs typically used. This dish is so yummy, traditional macaroni & cheese fans young and old will love it!

- 3 cups Cauliflower chopped into small pieces
- 2 cups Broccoli chopped
- 1/4 cup Butter
- 2 tbsp All Purpose Flour
- 2 cups Whole Milk
- 1/2 tsp Salt
- 2 cups Cheddar Cheese cut into 1 inch cubes
- 2 tbsp Marscarone Cheese
- 3 slices Whole Wheat Bread toated
- 2 tbsp Butter melted

Instructions
- Boil cauliflower in boiling water for 6 minutes, adding chopped broccoli for last 3 minutes. Drain. In a saucepan, over medium heat, melt 1/4 cup butter, stir in flour, cook, stirring often for about 1 minute until smooth and bubbly. Add milk and salt, stirring occacionally for about 4-5 minutes. Stir in cheese, marscapone, cauliflower & broccoli. Pour into casserole dish or 6 individual baking dishes. Place toasted bread in blender and blend until bread crumbs. Mix with melted butter and sprinkle over "mac" n cheese. Bake at 350 degrees for 20-25 minutes or until bread crumbs are toasted.
