This recipe is a healthy version of a yummy comfort food. Pesto is delicious on its own, used as a dip, and made with pasta and chicken for dinner. In my house, it's hard to find something all six kids will like, but this is a crowd-pleaser that everyone will eat. When you mix pesto with the pasta and chicken, it will be delicious, and you're eating all of the recommended food groups in one meal!

Instructions
  1. 1. Pick the basil off the stems and rinse off in a colander. 2. Place basil in a food processor with 3/4 cup of the olive oil, pine nuts, parmesan cheese, garlic, spinach, and salt. Mix until combined. 3. Then put the yogurt in a bowl and mix 6 tablespoons of the pesto into the bowl and mix together. 4. Cook pasta as per package instructions. When done, drain using a colander and let pasta cool. 5. Cut the fat off of the chicken, and cut into bite sized pieces. 6. Heat olive oil in skillet, add chicken and sauté until cooked. 7. Dice the tomatoes and set aside. 8. Mix broccoli and 1/4 cup olive oil in a bowl. Pour onto a baking sheet and put in the convection oven at 400º and roast for 15-20 minutes. 9. Remove stem of mushrooms and rinse off with cool water. Slice into bite sized pieces. Sauté in a skillet using olive oil until soft. Set aside. 10. Mix pasta and yogurt and pesto mixture together in the bowl. Add the tomatoes, broccoli, chicken, and mushroom in too. Split into 4 even portions and put on plates. Enjoy!
