- 3 Sweet potatoes
- 2 Carrots
- 1 Red Onion
- 2 cups Peas frozen or canned
- 2 cups Broth vegetable, beef or chicken
- 4 cups Water
- 2-3 cloves Garlic diced, about 1 tablespoon
- 1 1/2 tbsp Coconut Oil or olive oil for sautéing onions
- 1 1/3 cup Coconut Milk
- 1 tbsp Curry Powder
- 1 tsp Ground Cumin
- t tsp Salt to taste

Instructions
- Peel and dice onions, sweet potatoes, and carrots.
- In a large pot, add oil and sauté vegetables on medium high until onions are slightly tender.
- Add garlic and spices and continue to cook and stir vegetables for 1 minute, being careful not to burn.
- Immediately add coconut milk, water, broth and peas.
- Bring to a boil and cook for 1 minute.
- Reduce to simmer and cook uncovered for 30 minutes.
- Serve & enjoy!
