My family loves to eat burgers and fries, but this is not a very healthy meal. So now I make my own healthy version. I start with a bowl of lean ground meat and season it using a variety of heart-healthy herbs and spices – experimenting with flavors every time. Then I add a surprise vegetable ingredient for a flavorful kick! For the side dish, instead of unhealthy French fries made from deep fried white potato, I make baked zucchini fries. This dish is easy to make, healthy and delicious.

Instructions
  1. 1. Preheat oven to 400 degrees. 2. Wash zucchini, trim ends off, and cut into thirds. Then quarter into long strips like french fries. 3. Drizzle olive oil on large baking sheet. Space the zucchini across the baking sheet so it bakes evenly. 4. Add a dash of kosher salt and black pepper, and a dusting of all purpose flour. 5. Bake zucchini on middle rack of oven for 20 minutes, turning once half way through. 6. Place ground beef in large bowl. Add all seasonings from ingredient list. 7. Add the grated/minced green pepper and stir meat to incorporate all ingredients. 8. Make into 4 large burger patties (or 6 small patties, if preferred). 9. Grill burgers on grill pan on medium heat, approximately 10 minutes per side until cooked through. 10. Toast bun (optional), layer with burger and optional items (cheese, lettuce, and tomato). Serve with zucchini fries.
