  1. Preheat oven to 350 degrees. Spray pan with non-stick cooking oil. Core and peel apple. Then cut into very small pieces.
  2. Add sliced apples, carrots, cinnamon and oatmeal into a large bowl.
  3. In a medium bowl, combine melted coconut oil, sugars and 2 eggs. Using a hand mixer beat on high for 1 minute. In a separate bowl combine flour, baking soda and salt.
  4. Add egg mixture and flour mixture to oatmeal apple bowl and combine with a large spoon. Be careful not to over mix the batter. Add to pan and cook for 45-50 minutes.
  5. Remove and let cool until you can’t resist having a taste!
