Add a little bit of oil to the pot
Add ¼ cup onion, ½ cup bell pepper, ½ cup potato, ¼ cup peas, ½ cup carrot, add 6 leaves of spinach and ½ cup tomato in that order.
Add ½ tablespoon of salt
Cook the veggies for 5 minutes
Add the quinoa and mix
Add the spices (add more if wanted)
Add ¼ tablespoon of salt
Let it cook and mix for 3 minutes
Serve warm with coriander to garnish
