A Taste of Asia
When I am cooking I like to use flavors that you would really not think about. Like my peanut butter sauce. I first tried it at an Asian restaurant and when making this sauce I kind of recreated it. Also when I was making my chicken I added some orange and ginger and that really gave the chicken that “zing”. When taking these risks it is really important that you can execute the dish correctly or else your food will probably not taste good. Cooking needs to be unique for everyone.

Instructions
  1. #1 – MAKE YOUR PEANUT SAUCE: Start by blending the peanut butter, rice vinegar, honey, soy sauce, lime juice, vegetable oil, garlic, sugar, salt, ginger and red pepper. Blend until smooth. Then add in the cilantro and blend it all together. Refrigerate until ready to use.
  2. #2 – MAKE YOUR SALAD For the salad toss together the spinach, lettuce, tomatoes and carrots to create the salad.
  3. #3 – MAKE YOUR CHICKEN Then in a sauce pan add a splash of rice vinegar. soy sauce and teaspoon of olive oil and cook the chicken. While it’s cooking, add a touch of squeezed orange and a teeny bit of ginger. Continue cooking chicken on both sides until fully cooked all the way through (5-8 minutes).
  4. Plating: Makes four servings. Divide all salad ingredients on four plates and drizzle with peanut butter sauce. Then add the chicken one the side of the salad. Grate orange peel over chicken and you are finished!
